Cool! Au Sabot makes solid (if not super-fancy) knives. How does the spine look? Is it flat? Or does it have guilloche?

This one is flat, real simple. As you said, not fancy, but serious, I like it

David Dauvillaire, they look nice. On the website I mentioned they have various laguioles, Au Sabot and also Arbalete Gene David, those look higher end

I have a Balade and an Actiforge, both have misaligned blades and should not have made it past quality control.

If you don't mind: I have an Actiforge that I love. Because they let me customize it (steel, bolsters, scales, etc). Probably different QA for a custom order, but it feels technically perfect ...

The Jean Dubost on the right is one of my oldest knives (wrt. ownership), gifted by my wife to me 20 years ago when we were still dating.

Got this one recently from that new website specialized in French folders, knives-of-france.com. That's an Alpin with walnut sides
They have a few brands, but various styles (and price!), you might want to check it

As you mentioned, not really fancy but good and with an authentic feel, pretty comfortable in hand
