Maybe I'm crazy, but I just through of this and it appears to work on the knives I have, as long as I'm being really careful to get measurements from the correct datum. It's pretty hard to figure out angles if you don't have a standard angle or clamp system like the edgepro, or a gonomiometer (http://en.wikipedia.org/wiki/Goniometer), and this is one way to get a rough estimation of the overal edge angle. It only works in straight lines, so if it's a convex edge you can only get the angle cutting straight through the curve of the convex curve where one edge touches the main grind, and the other touches the cutting itself.

So, take this:

and take these measurements:

and then plug them into this calculator where the face of your bevel is the 'sides' and the thickness at the demarcation line between edge bevel and main grind is your base:

and voilà! you have the combined angles. Divide by two and you have it per side. As an example, on my Svord KGO the bevel faces are .020" tall, and the thickness at the demarcation line is .016" thick, making for a combined angle of 47.16, or roughly 23.5 degree's per side. I actually beveled it at 23 degree's on my edgepro, so it's pretty close :)

Note, this only really works directly on symetrical v-grinds. If it's a convex, it will only measure the line between the demaration line and the edge, think of measuring the string on a bow. This is also difficult to do on any kind of blended edge.

maybe I'm crazy, but I hadn't seen anyone give this as a 'how to tell what your factory edge angle is set at' solution before o_o
