Now that I have decided to replace the Meerkat as my front jeans pocket inhabitant with a grey Calypso I was thinking about what to do with the Meerkat. It has never really cut well enough for my purposes which was a little disappointing. I've decided it will be a kitchen table resident, peeling friut, opening letters, that type of thing. I want it to slice well. So, I got out the old Sharpmaker and decided to reprofile it to 30 degrees instead of 40, mainly to see what difference that would make. The AUS 6 steel was surprisingly easy to reshape even on the grey Sharpmaker rods. After a bit of work I had the angle changed and it was shaving sharp. What a difference, it's a different knife. Slices stuff like you wouldn't believe, I think it's going to make and excellent kitchen table knife for small jobs.
