I have the BOTM Santoku and a Redwood one too.I have an Elk Santoku on the way. I can't imagine the Nov cutlery BOM is better than that.
They are the perfect size and get the most use from me.

My 2 showed up today as well. Pleasantly surprised. "She who must be obeyed" rarely strays from her santoku digs it (much to my surprise).
No phots.. they look like the others. With ebony, I almost always buy 2 and pick the keeper with the handle we like.
Handle is super comfortable, it's also pretty stout.

Same, mine looks dark in the picture but has a lot of brown woven in.Another great one. The thing about these cleavers, they look so much better in person. I tried in the pictures to show how nice they are but I could not get a picture that captures the beauty.
