Stamping displaces metal no metal is removed just moved. The edges arent as crisp

Etching is done with acid and or electricity. Metal is removed or more accurately eaten away. It tends to leave a frosted look.

Engraving is done with chisels or gouges and actual slivers of metal are removed. Giving sharp shiny edges.

The logo on a Randall is stamped. If you order one with your name it’s engraved.

Here is a picture of two knives. The one on the left has an etched logo. The right is stamped. Oddly, this etched knife has a separate stamped S.

They have not etched logos in years. They used to etch when they had a light strike and the logo was ground out during finishing. They have a better striking process now.
 
The O on etched blades is round; the 0 on stamped blades is oval.
