Because the forum has had a rash of incidents of late by scammers of various stripes and methods.

By providing a current photo which has your user name and the date on it, it will help verify that you have the knives in your possession.
Best practice would be to place the paper with the user name and date both on top of the knives and alongside so that it shows it wasn't photo-shopped in.

This is the world we live in now. It's a simple enough thing to do, fortunately.
