the video that comes with the sharpmaker instructs the user to hold the knife edge perpendicular to the floor when making the downward stroke. however, sometimes i achieve greater success when i hold the knife on an angle when making the downward stroke. seems like you get better "bite" on the blade. anyone else have similar experinces with getting a a better edge with this technique?

scar--if you are not holding the blade perpendicular to the ground then you are changing the angle of the edge. Your problem sounds like the edge is not profiled properly to work with the Sharpmaker's designated angles (40 and 30 degrees). You would need to re-profile the blade so that when you hold the knife perpendicular to the floor the edge is properly aligned with the hones. The way you are doing it isn't a problem, it's just that you are getting a different degree edge. If that's good for you then no problem, but if you're holding a different angle then you may as well buy a flat stone instead of a v-type sharpener.
