Can anybody point me in the direction of the post explaining perceived sharpness as you progress through stones? I remember it was a post mainly about hair-popping vs tree-topping vs shaving. It explained why a knife finished on higher grit would fall a point on the hair popping test and vice versa if I remember right. Thanks in advance.

You can pop hairs with a fairly coarse stone. It's all about proper apex and Bur removal.
