Hi all,
I've got a handy little 7" Honesuki up for sale here today. It's AEB-L stainless steel heat treated to RC62 including prequench and LN cryo. The blade grind is hybrid full flat/convex down to 0.007" and it's hand sanded to 600 grit. The handle material is some beautiful stabilized spalted mango burl with blue hybrid "bolsters." This is a nimble little all around kitchen knife that will be a great addition to your kitchen arsenal.
SPECS:
OAL: 295mm (11.75")
BLADE: 175mm (7") long, 45mm (1.75") heel height. It has been hand finished to 600grit. The grind is hybrid full flat/convex which is down to 0.007" before sharpening.
STEEL: 2.5mm (0.098") AEB-L Stainless steel heat treated to RC62.
HANDLE: Stabilized Spalted Mango/Blue Hybrid, with Natural micarta, white G10 liners and natural micarta pins.
