what is the best stainless steel for a 3 inch blade wood carving bushcraft knife

what thickness should the steel be & what HRC should the steel be for best edge retention?

I’ll bite. There are many good stainless options but I’ll give you one of my favourites.

Steel: laminated CoS.
HRC: 60
Thickness: 3-5mm

I also enjoy CPM154 and S35VN in similar thickness and hardness.
