When I am backpacking I usually carry commercially prepared freeze dried meals, if it's just a couple of days I will pack Harvest Foodworks as I've found them to be the tastiest, but they require usually a bit of cooking which can bite into your stove fuel budget. If it's a week or more I'll pack Alpinaire meals as they only require you to add hot water. I generally supplement this with Uncle Ben's boil-in-the-bag rice (once cooked add a packet of Lipton Cup-o-Soup and you've got a tasty high-calorie side dish). Quaker instant oatmeal for breakfast, and a Clif bar or Power bar for lunch. And most importantly the fresh ground coffee and micro-melita filter cone.

Light weight is generally more important than tasty for me.
