Two-8" W2 Chef Knives

These are older knives, but as yet unused. The same applies to both, the handles are just different colours.

The blade is 8" the OAL is 13", it's about 1.75" tall at the heel, and has a convexed zero grind. The blade is made from 600grit finished W2, tempered to 63-64 hrc. The handle is made with composite resin scales that are pinned with 303SS, epoxied, and buffed to a mirror. Everything is flush fit, and the spine and choil have been rounded and polished. The blade tapers from 1/8" at the handle, to .055" at halfway and .035", 1" from the tip. They've both been sharpened to 8000grit and stropped. Both will weight between 165g and 175g (5.8oz-6.17oz).

If you rest the tip of either of these knives on a potato about the size of a baseball, and just push the blade forward, with no downward pressure aside from its own weight, it will have cut completely through that potato before the blade has been pushed past half its length.
