Here are two (black palm sold) really nice chef knives, thin and light these are great for prep work.

Specs

Steel: 1/8 440c stainless, professional heat treat by Paul Bos shop to 58 -59 Rc

Handles: Stabilized by WSSI, fastened with epoxy and cutler rivets.

All are full flat grind, to about 0.015

15 Degree Bevel


First is Stabilized Red Palm, 12 3/8 overall length, 7 3/8 blade, 1 13/16 wide.

is it an optical illusion or is the handle on the Maple Burl knife bigger (deeper) the red palm? Are both knifes 12 3/8" overall in length?
