Removed my 3VMT XII from its sheath to discover it well greased. I mean well greased...

As for as for displaying is it ok to remove some of this extra grease?

I mean I want the knife to be protected since it is carbon steel but streaks of grease covering the blade is unpleasing to look at especially for displaying.

I noticed this too. I wonder if the grease can harm the Kraton handle material...?

Remove the grease, then apply Renaissance Wax or car wax to protect the blade. Shipping grease does not harm the handles.
 
3V is not a high carbon steel, it's a high alloy steel. It is very low maintenance, but if you're worried about it, just put a little oil or wax on the edge. You don't need to coat the whole blade as it's already got a DLC coating.
