Went old school JK to trim my Boston Butt for tomorrow -

I pulled out my JK Handmade Protourist-designed Cutlass in snakewood with brass pins to do the trimming -

Worked great - just a couple swipes on a steel and away we went!

Doing a simple slt/pepper/celery seed rub with a mustard smear. Putting the almost 9 pound roast on around 4am.....

Hoping to have the rest done and the pull started at 4pm tomorrow. We'll have plenty with some extra left over.

I wish I had more of my knife friends down here in TN with us - the more the merrier -

Thank you, Gentlemen.

The butt went on the Recteq Bull at 4:15am.

It is a steamy 69 degrees here in south central TN, but calm and no rain. Lots of pork and good eating expected late in the day :_

Nothing is better than the smell of pork with a clear smoke coming out the chimney..... Yum!
