imo, wilderness survival, as well as any other form of survival, starts taking place as soon as something out of the expected or planned activities begins.
if you're prepared, it just becomes plan b, c, d, or whatever
if you're NOT prepared, it can become a life threat.
for your specific question, wilderness survival...you're hiking, tracking a deer, mis-read a map, "thought" ya knew where you where, a storm blows in, a rapid weather change, you mis judge time of daylight...any of these things CAN put your bacon in a survival situation...
are you dressed properly?
do you have some rain gear?
do you have any water?
any warm drink mix?
do you have any extra gear to provide these things?
the list can really go on almost endlessly...the key is to have at the least the minimum gear to get thru this...so again, if you're prepared, plan b, c, d...
if not, you my friend, depending upon what cards you are being dealt...YOU MAY end up as a statistic

have you practiced/trained with it?
are you sure it works?
are you sure YOU can work yourself and your gear thru it?
