What is good today in a "modern" Large Stockman?

I think you'll be very happy with your selection. I have both a Case '75 and an early Buck/Camillus 307. A handful to be sure. Very sharp. I'm actually carrying my 307 today. Too much knife for my everyday use, but felt like carrying it for old times sake. This size can get a lot of work done and quite suitable for your needs.
 
They're kind of a hollow saber as opposed to a full hollow like Case uses, but no they aren't a conventional flat saber grind.
+1 This^ exactly. A 'hollow sabre' is how I'd describe the grind on Buck's 301, as compared to Case's '75, which is essentially a full-height hollow grind and therefore thinner almost all the way to the spine.

Excellent examples can still be found on the secondary markets for between 50-100 dollars, and their stainless blades are known for a great heat-treatment. Here is a prized example of mine from the Schrade Walden era (pre 1973).

Excellent examples can still be found on the secondary markets for between 50-100 dollars, and their stainless blades are known for a great heat-treatment. Here is a prized example of mine from the Schrade Walden era (pre 1973).

What sheaths are better or best for these large stockmans?

I am looking at the W.R.Case & Sons 9027 Large Knife Sheath at the moment. At $11~$13, I wonder if it is a reasonable option and whether I should look at another option.

Looking on eBay, I see some in blue boxes and some with a multi-colored box with a white background and red & blue accents and writing in addition to the brown box you have. Many have Schrade listed in the name as well.

I assume Schrade was a buyout of the original name but, I don't know if the knives remained the same or not. A few look like they are carbon steel as well with tarnish or light rust pits.

All of them have USA stamped on the tang but, I wonder if some of these are fakes or are newer knives from overseas.

If USA is on the tang you should be safe from overseas, but a counterfeit is always a possibility. The Uncle Henry branded knives have always been stainless, so if any of those show tarnish or pitting I'd beware. The brown boxes are older than the colorful ones, up to about 1985 or so. The red white and blue boxes are from just before they went under, so 2001-2004. The gray and black boxes are from the late 1990s, and the creme and black boxes are from the mid 1980s up to the late '90s.

Instead of a belt sheath you could use a buckaroo from Horsewright Horsewright . I carry my forum stockman in one and don’t even notice it in my pocket.

I carry a Hide & Drink Waxed Canvas pocket organizer in my RFP. Carrying a knife the size of a 75 Stockman loose in a pocket would be a deal-breaker for me.
