What knives have the highest demand with the lowest supply?
Adversely, what knives have the lowest demand with the highest supply?
 
Are we talking knives in current production? Does this question also contemplate custom knifemakers? Are there any parameters?

As for high demand/low supply, I'd figure something handmade by Mr. Scagel or Mr. Loveless would fit the bill.

As for the lowest demand/highest supply, I'd say chinesium butter knives or plastic disposable knives.

As far as GEC ; I would have bought three or four as soon as I saw it in their fresh listing and their links to I forgetwhonow . . .
Never found a single one I wanted that was available .
I havent even looked at their site now for about a decade .
For the most part I prefer Case blade shapes and often Case handle shapes anyway even though the fit and finish , in the past, was not as good . Lately I have gotten some pretty dang good Case knives ( Dark Navy Blue Jigged Bone Trapper and Jigged Black Water Buffalo Horn big Folding Hunter ).

GEC : I have about thirty Case Trappers alone now . . . at least a few of those would have been GEC if only . . .
Not to mention the other hundred or so slip joints I have bought since .
Silly rabbits .
 
Would need more details I think. Such as folder, fixed blade, auto etc...

But, if talking mostly folders....

For production knives, GEC always sells out fast, but they keep supply low.
I think there is some demand for Al Mar knives, since there was excitement the last couple of times something of the name was offered. But there is no way to guestimate demand and there is no new supply.
 
Another vote for gec. Beer and sausage GECs showed up on the new releases section but sold out at a slower rate to my surprise, the last one held out for a full day, but nonetheless it ended as you'd expect.
 
We know of at least one GEC model that has way more supply than demand :)

In more regular knives, Casexx P&B range sells instantly.

What knives do folks want, but are not able to obtain?
