Whitetail and larger hunters - what is your hunting knife set up?

I mostly use the Spyderco Mules... usually in S110v or K390 ....Love those knives! I also have a Phil Wilson South Fork in K390 and a Spyderco Sprig in S90V.

As you can see... With the steels I use, I dont like to sharpen knives in the field! I use the "gutless" method and bone out the deer/elk since I hunt in the mountains and cannot drag the animal very far.
 
Man, I've used a pile of different ones over the years, fixed and folder.

Currently I use the White River Sendero Pack knife designed by Jerry Fisk. It's a damn fine piece.

Some other notables were the old Schrade USA Sharpfinger (fabulous), Grohmann D.H. Russell (great piece) and a custom I had built back in the day that was actually Damascus. Maybe the best folder I've used was a Cold Steel Medium Clip Mate from waaay back in the day in whatever San Mai they made it in at the time. A Lone Wolf Drop Point Hunter by Benchmade made one hunting season, but never got pulled from its sheath that year. Great knife though, my son has it.

I only had one knife in my years of hunting that had a gut hook, and I never used it for the gutting. I cut rope with it mostly. I thought it was gonna be the end-all be-all skinning tool, but it never lived up to the hype I gave myself. Was one of those Wyoming Skinner things with the finger holes, like this.

I appreciate it! I also have one in ironwood :). Both are marked 2009 on the opposite side of the blade from the maker mark and I have a Loveless clip point utility that Bob made in 2006, in stag. So you can say I’m a fan of Bob’s customs lol.
 
Last year my aus8a outdoor edge with guthook worked well.

This year I'll have that one along with a busse combat boney active duty to try out.
