From my limited use I would have them in this order. I have not used any of the upper scale woods yet.

Maple Burl
Redwood Burl
Bubingna
Cocobolo
Bocote

Of course this is just a personal opinion but, I have seen many fine, even classic looking knives that left me cold due to micarta/ carbon scales. If a knife is finelyl made and designed, shouldn't the same care be given to the scales/handle ? I for one will only buy or have made, a knife with organic scales ---- I just love the natural beauty --- not man made. Each piece is origional and no two are exactly alike. I'm with you Marekz , however I don't have a list in any order of which woods I prefer.

Big leaf maple burl, walnut burl, amboyna burl. I think beefwood looks pretty sick too.

Oops, I forgot teak burl.

I love to work with amboyna, but the black wood does look very classy right? My list would be:
1- African Black wood
2- Amboyna Burl
3- Maple and Black Ash Burl
4- Hounduras Rosewood Burl
5- Curly Walnut

1. Desert Ironwood (the best ever!!!)
2. African Black wood
3. Good Walnut
4. Maple of any kind because it's so easy to work.
5.Buckeye Burl (don't know why but I love the look of this stuff if done right)

Ebony
Cocobolo
Brazilian Blackheart
Redwood burl
Black Palm
Amboyna burl

Not necessarily the funnest to work with, but the best looking IMO...
