This ZT 0562cf was done in a regrind by @razor-edge-knives. A great knife without it, but pleased with the finish and slicey performance from the regrind.

Specs:
  • Spine width before and after: 0.160"
  • Weight: before - 5.45oz; after - 5.35oz
Results:
  • Blade passes informal sharpness tests in @wootzblade sharpness chart up to shaving arm hair and can fillet a curl off thin receipt paper.
  • Simple food prep tests, sliced a wedge out of an apple without splitting. Held a cherry tomato upright, did a single draw-cut slice thru it leaving the slice on the blade.

The 0562 is a great knife but the standard grind makes it a poor slicer IMO
I would like to have mine regrinded

Cool, I really liked the 0562, but the edge was too thick to do much with.

Thinner blades are always better slicers. There is nothing secret about it. I often look other models like Spyderco for good slicers.

The reground ZT0562 looks great, but I imagine the additional cost will be nontrivial.

It looks awesome! I really like ZT but find most of them thicker behind the edgee than I would like. Op, I’ll bet the performance of your 0562 is amazing. Congratulations!

I always thought that the 0562cf was one of the better slicing knives from zt. But not as good as say a Spyderco.

Now I want to regrind all my zt's. Wish it wasn't so expensive tho.
