yeah, what you are calling a problem is normal in my opinion, and just a consequence of the design and execution. Lockup looked good. Try using the knives for awhile, I bet the lockup will only get better.
 
My experience with pocket clip screws are that I am lucky to get them in and out once or twice. I will switch a clip then leave it. It is normal that these small screws are not regularly servicable IMHO. BTW, I would not recommend opening any more beers with the wave part of you roadhouse. Probably messes with your lock maybe?

When I take off the pocket clip, I loosen all the screws and then lift the pocket clip off with them all hanging in it. Works well every time.

And the knives looked normal to me as well. Knives with liner and frame locks pretty much all have some lock movement if you work against the lock itself.
