For kayaking over 7" I'd recommend something in 12c27. Stainless, tough, easy to sharpen and takes (and holds) a great edge
 
Smaller blades like the bravo in s35vn, or a budget friendly open season buck skinner in s30v. Or an entrek USA,any size in nearly indestructible 440c
 
Pretty cool, What knife is this and who made it?
It's a copy of a WW1 American Bolo make by a company called Kiffe Sporting Goods in the 60s.
A friend found it at a garage sale in poor condition. He polished it up, installed new handle slabs and made a sheath for it.
Makes a great camp knife.
 
I kind of like my big ole Ozark Chopper in 1/4" thick CPM 3V. If I need more blade than this it's time for a machete, saw, and/or axe in my opinion. It's got bead blasted micarta and a rather utilitarian grade finish on it but it's a workhorse for me. I use it primarily building and brushing in blinds/stands, for hunting preparation, and for just playing with a big ole chopper.

It's right at 7" but my favorite big knife is the Caribou Blades Mountain Caribou Knife

I would reccomend Z-Finit if you are going to be using it kayaking. I have made several Zfinit knives in the past and they hold up great.
The Kaiju bowie has a 7.5 inch blade and is 0.226 thick Zfinit. May be over kill for what you need. But i am making a different version that is full convex.

Don't know this for sure, but I'm expecting it to be the Roselli leuku I'm receiving in the mail this week. Psyched!

Until then, it's a Dawson Sheffield Bowie made in Barry's Durango period.
