need a good utility knife for art school

I suggest you look at the Opinels. They are so cheap, you can get a small one for most art work and a slightly larger one for the kitchen. (I bought my first Opinel at Williams-Sonoma.)

Click on Opinel brand knives, the fourth line down.

I agree straight up with this. An Opinel is an excellent option and can get hair popping sharp and is available in different handles.
 
The OP mentioned his 3D teacher asking him to bring a mat knife.
I responded with mat knife = Olfa snap of blade.
I seriously doubt his 3D packaging class will require beveled mats for photos, paintings, etchings, animation cells or record albums.
Then again, after 30 years in the business, it wouldn't surprise me :D

Tyler School of Art grad here (where I also now teach at) my BFA is in Photo.
I know its a little late but just wanted to put my advice out there
Have a couple of knives what I would recomend is this

1. a good multi-tool like a Leatherman Wave it will become a fast friend in art school it will do many things and take up half the space (which is always an issue in dorm room)

2. for general hard use in a studio I would recomend something like this http://www.stanleytools.com/default...04&SDesc=SportUtility&#153+Outdoorsman++Knife
on one end it is your standard liner-lock combo edge knife and the other end has a replaceable utility blade and it cost $20 or less so if it breaks or walks off no major hurt to the wallet. And for uptight school officals it is very obviously a utility/work knife.

3. Go to your favorite mega-store (Wally-mart or Target) and get a cheap 3-4" paring knife for cooking. There is an important reason for this which hasn't been touched on yet your knife will be coming into contact with a lot of nasty materails/chems in art school that you want going nowhere near your food.

Past those if you want another EDC go for it.
As far as people freaking out about you having a knife unless you plan on whipping it out every 2 min making a big show of it or point it at people and make stabbing jestures I don't think you have anything to worry about. For the most part people in art school are pretty chill...unless they are pulling their 3rd all nighter in a row and are hopped-up on coffee, no-doz, or some other stimulant legel or not, and then they might be a little edgy.

All that said have fun and enjoy your time in art school, if you embrace the experiance it will be a fun & wild ride

Oh and you said something about a cutting board. yeah you could get one for cooking but if you do make sure you clean it really well after every use getting sick from food poisoning sucks.
But, what I would really recomend is getting a self healing board aka a Jesus Board. These are a great tool for extending the life of your blades and saving your tables and floors from some serious scratching/cut marks.
Oh and just like the knife if you use this for art don't use this for food prep (same reason as above)
