Sharpening with different grits on opposite sides of the edge

The fellow Gabe, who sharpened the knives in that video has put up his own videos.

In one of them he shows the blade shaving arm hair on one side of the blade and not the other, which tells me he is making a "broken off burr" type of edge. Basically he does edge trailing strokes on the coarse diamond stones to make a burr and then breaks it off on a king 6k. Very much reminds me of the Murray Carter King 1k/6k edge.
 
I tried this technique,and it is agressive edge...but i get agressive edge that shaves hair anyways...when sharpening both sides equally....
