Especially river caught catfish. Farn raised fish never fight current and to me the meat is mushy, if you know what I mean.Fried catfish on a bun with some lettuce, tomato, and some tartar sauce is about as good as it gets.
Dayum. Only improvement would be crawfish Etouffee on top of the catfish. Maybe red beans and rice with audouille sausage for dessert.We used to have a cajun restaurant near us who made a dish that was jambalaya, topped with gumbo with a fried catfish tail on top. My absolute favorite way to eat catfish.
