What Did You Sharpen Today?

New to me 940. This blade is thicker in spots, like the curve near the tip, and right at the heal. Really having to work to get the angle totally flat. Tomorrow the 5000 and Gunny Juice comes so I can finish it.
Also had to spend more time on that Wustoff as it lost its edge after a week. My wife cut some squashes with it. Rather than one of the large knives she went to town with that 6 inch lol.

I can see how the edge termination goes right into the plunge. Hate that. How are you avoiding widening? Adjusting the sharpening angle for different sections of the blade?

Occurs to me that it would be a nice feature in a "fixed" angle system to have some kind of lever that allowed you to manually raise the sharpening angle 0-2° for situations like this. Kind of an adjuster *under* a micro-adjuster?

Sadly no. I should have found a different clamp angle and moved it so that wouldn't happen. The first pic is my 945 (mini s30v) the second is my 940, with s90v. I might rasp that plunge to smooth it out and lightly blast it back to a stone wash or ignore it as the 940 is the workhorse EDC when my 535-3 isn't pocketed. I can't claim to be doing much of this right as this is only the 6th knife I've worked on. (I didn't do my 945 it was done on a Wicked Edge)

This again after a full tear down, been futzing around with it, and while it’s sharp it won’t shave. And my d2 practice knife which also won’t shave.
Using stock TSProf stones: 150,220,400,600,1000, then chosera 5000 finished with Gunny Juice 1u on Alder wood. I realized the 940 blade required bracing off somehow to keep from hitting the plunge. It’s my EDC so I’m not terribly worried about hitting it.

New to me Spartan Harsey Plague Doctor and a custom kitchen utility knife I bought for my wife around 25 years ago. Tormek/CBN and Ken Onion Blade Grinder with leather belts. Took the Spartan from its stock 20° down to 17.5°. Reprofiled on the 180 CBN wheel, then 400, and finished on 1000. Stropped on 5 micron, 1 micron, and plain leather. 80 BESS.

The kitchen knife got the 400/1000 CBN, followed by Tormek compound strop at +1.5°, then exact angle (15°), and finally plain leather. 65 BESS.

Picked up this lightly used Cutlery Shoppe Exclusive S90V Manix 2 LW, for a co-worker, and put a nice semi-polished edge on it for him, earlier this evening.
Sharpened on the TSProf Kadet Pro at 17 degrees per side, using 80, 250, 650, and 1100 grit Edge Pro Diamond Matrix stones.
Finished on a leather strop with 1 micron diamond emulsion spray. Nice and sharp now.

I like the LW version of the Manix 2, after handling this one, but I'll be waiting until the new "screw together construction" models become available,
before buying one for myself.

Nice job. Can i ask you if you found the 80 grit not too low a grit, or did you have to reprofile from a more obtuse angle. Whatever, like your work and the sharpener doesn't look too shabby either.

Thanks cudgee cudgee . The 80 grit worked great, as I did reprofile it, just a bit. I hadn't used the EP Diamond Matrix stones in some time,
and had forgotten just how fast the 80 grit stone cuts. I've been using the Venev Ursa Series stones, but decided to give them a rest on this one.
Still very happy with the ease of use and set-up of the Kadet Pro. 🍻

Yes mate, you have to be so careful using low grit diamond stones they can get away from you and i speak from experience. I also have some venev stones, i really like them. Love the look of your set up, the Kadet Pro looks like a really good well made system, glad you like it. Have a good week.
 
Today I had 4 kitchen knives and 2 pocket knives from a friend where I used to work.
Gave me a chance to try out my new Shapton stones. I don’t have the 220 grit yet and certainly needed it so I used some diamond stones to get the bevels set as all of the knives were very very dull/damaged and haven’t seen a stone like ever!
Of my Shaptons I have 500, 1k and 4k but didn’t take any of them up to the 4k staying at 1k to keep a more toothy edge

Had an 8" chef's knife of unknown origin, there were many many nicks in the edge with one that was about .5 mm deep or so and for the life of me I could not get those nicks out, worked on it with coarse diamond and then the 220 shapton.

I think my problem was I wasn't really setting a new bevel, not aggressive enough to get that edge ground back, so I was just feathering the bevel but still had all those nagging nicks that would catch on receipt paper or paper towel, very aggravating to say the least. So, I went back to the shapton 220 and raised the back of the blade a little higher and started in creating a new bevel. FINALLY it all came together, went from the 220, to the 500 and ending at the 1k and a light strop on some cardboard flat on some wood so as not to roll the edge. Now it has a far better edge geometry and cuts great. I'm sure my friend will be pleased when she gets this back. I've been retired for a couple years and that was the last time I saw this knife, so it was in dire need of sharpening/repair.

After coming off the 1k it still had a toothy edge which I think will be better in the kitchen, I don't know if going up to the 4k would be good? I may try on one of my own at some point.
