Is that a German kartuffelzalat?
No, but after looking that up I am going to try making some of that soon. A few tweaks on today’s recipe and it would be close.
Red or black rice?

It was a purple jasmine rice with some curry seasoning and vidalia onions added to it.

Curious for how long and at what temp you did the veggie tray. A good flipping halfway through or just let it do its thing? I don't do Brussels sprouts often but I always seem to under or overcook them.
350 for about an hour. I don’t typically cook them this way, but was feeling pretty lazy so I just put all the vegetables on one tray and threw them in the oven. No turning while cooking, just let them go and then mixed it all up afterwards. Turned out pretty good. Tops were browned and the bacon, onions, garlic and bell pepper added some good flavor.

Before baking, I put everything but the bacon in a mixing bowl and poured some melted butter on top. Tossed it to coat the vegetables, then poured on the baking sheet. Add bacon on top and stick in the oven.
