I think that particular knife is called Le Francais and is made by Atelier Perceval. The shop is located in Thiers, France, but dont manufacture knives in traditional French style. The main designer is Roland Lannier (learned this from Stefan on Youtube and got addicted to French cutlery). Those knives have so much quality and the design is fantastic. If you get a chance to see one in real life, you will also catch the bug!

I'm French so it's no surprise that I own a Le Francais and L-08 Unfortunately I don't have a "Le Thiers". Maybe one day. But I do have a Chambriard Juniper Compagnon - sooo nice!

I know Perceval is located in Thiers - but to carry the name and to put the "Thiers" logo on a knife, a maker needs to follow procedures and standards. I also think the final product needs to be approved.
