This was from the other night. My oldest had a science project that included many ingredients for pizza, so I turned the rest of the items into . . . pizza
For those of us that could eat gluten, we had pita bread for our crusts, for the others, I used a bready item called Cuñape (yucca flour, cheese, egg, baking powder, and a tiny bit of milk). Turned out tasty
I decided to sautéed peppers, onions, and mushrooms for these pies.

Made some Cuñape for sandwiches. They are something like 75% cheese, you can’t go wrong!
I hate my South American oven, it has inconsistent heat. Wish I had a convection oven.
Had to pull some and move others to the outside edge, but it all turned out ok.
Bits for the baby and sandwiches for us big folk

The wife wanted some GF muffins for Christmas breakfast, so I started out my day grinding grains and making a ‘flour’ blend. It took a while, but they turned out well!
Then supper ended up great. I made mini cheddar oatmeal meatloaves, green beans with basil, garlic, onion, and mushrooms, and finished off with garlic, thyme, rosemary infused mashed potatoes. The pics aren’t great, but the food was awesome.

I really need to stop being lazy and take out my nice cameras. My phone’s pics are sometimes passable, but they’ll never be great. I finally broke down and tried imgur, hopefully that’ll help pic quality too.
And yes! Just the right amount of ketchup!
