This is not as well known as you would think. I'm sure there are other companies cutting their knives against the grain. If its a smaller knife, or a simple steel like 5160 that is rolled fewer times, the effect is not as pronounced. But if its a long knife made from a PM supersteel, you will have a hell of a time getting it straight and they will snap in a vice with ease when bent.Oh hell yeah- thanks for the demonstration!
