Yes!Here is a quick visualization of why grain direction matter. Here the folds in the paper represent grain lines/ rolling direction. You can see one set of knives is cut with the direction of the grain lines, the other, is cut against them, crossing the grain lines.
As you can see, the blank that is cut with the grain is flat, the one that is cut against the grain looks like a crinkle cut fry.
