BTW, the last two knives I purchased from Perceval, they let me choose the handles from a few different raw handle blanks before they made them. Amazing customer service!
 
A la thiers has always been on the list but never at the top.

Chambriard makes a very fine Le Thiers knife and if you want a Le Thiers, you can't go wrong with it. Personally, I prefer the Cognet version. I did end up letting go of the larger bolstered version shown. It was very heavy. They do have the large size in a shadow style as well.

Had a Fontenille Pataud version as well, but let it go also. Can't go wrong with them either, just wasn't quite my favorite.

I would avoid Goyon-Chazeau..... Hit and miss in the F&F.

Cognet has a lot of wild handle choices also.

Chambriard f&f is very high, don't see a lot of complaints about the quality. Mine is an older 1 made 2007.

The two Chambriards I own are le compact pattern, around 9cm, just right for the pocket. The next size up is a big heavy version which I gave away. These two, Stag and an Ebony with extra pin-work are very fine slicers indeed, nice file-work. There is some slight blade play but not overmuch .

draggat draggat Beautiful Horn Cognet, remarkable colours. Interesting about the Goyon-Chazeau, not had any of their pocket-knives but their kitchen knives are really good especially the 'Office' /Paring knives.

I think I mentioned on this thread that I ordered another FP laguiole for my unborn son. While at it I ordered this for myself. Very excited.

I also sent back my own laguiole for repair and got an email today saying it had been received.

draggat draggat mitch13 mitch13 Will Power Will Power all beautiful examples gentlemen. I have a hankering for another boxwood knife so I think that will be my next purchase. But then again I don’t have ram horn or buffalo either… knives are an addiction!
 
The images above inspired me to take some more detailed images of my new Le Thiers to share. One thing I learned while in the store was this Le Thiers was not a slip joint, though I had always thought of them that way. Instead, it is more of a back lock with the release being at the end of the handle. I thought it was also interesting this release provided tip protection for a blade that extends beyond the handle itself. I quite like it.
