Samosa

I had planned to buy samosas, but they had sold out

My wife makes samosas, but African style, called “sambusa” where she’s from. Usually made with ground beef and scallions, but this last batch had beets and potatoes in them (these are the ones I froze for later):

The wrappers are homemade too, rolled out by hand. It’s a lot of work, so I don’t get them too often. Now you’ve made me hungry, though, so I guess I will warm a couple up in the toaster oven…

Unfortunately can't get large potatos as Australia has a potato shortage at the moment. The supermarkets freezer sections are bare of potato products, the wife is having trouble getting chips & wedges or potato products for the cafe & cost has shot up
