A chef's knife is my choice for most kitchen prep:

But for dicing potatoes, nothing beats an Opinel:

It slices through them with ease.

They will be mixed with the other vegetables and some eggs for a good south Texas breakfast.

Papas con huevo á la mexicana.
With bacon, of course.
