That is basically what I do. I use to do it in a food processor but I now do it by hand. I have found it is actually less work when you take in to account cleaning the food processor. We usually make pizza once a week.I’ve been using a store bought dough lately.
The bakery in our grocery store sells frozen dough.
It’s as good as anything I can do at home.

I know the pros stretch it by hand, I roll mine for the most part and try to finish it by hand.
