It makes sense for Guy to build a few of each model as the parts arrive in his shop to see how things are going to come together and identify any problems.
Having done that it also makes sense for him to ship those knives to the appropriate end users.
I've also heard that it helps with the monotony to build a different model every once in a while.
I find it hard to decide when a model has actually begun shipping in volume because of the way they ease into it.
