These are Axis deer.

I'm talking about for home, haha. I was talking to my brother about it. Was trying to figure out the cheapest way to do it. We were both thinking about making it out of palettes. We both have access to them. Also, something may show up on Craigslist locally. Really not the right time of year, but, you never know.

doesn't actually change my answer - except I'd use T-111 panel on the sides instead of steel for an in-town smoke shack.
would be pretty easy to upscale it a bit as well.

no clue, since I've only ever worked with whitetail, elk, and sambar.
from 1-1.5" diameter, I can use rounds for handles on full size knives.
under 1" should work for bolsters or handles on smaller knives, neckers, and ferro rods
over 1.5" I should be able to slab.

We sat out in the freezing rain last night, and I gut drunk, haha. Buffalo Trace, not MM.
