3-rd one of kitchen knives I made recently. Ak5Mo stainless steel @~57 HRc, cca 320mm overall length, blade cca 200mm long and 1,9 mm thick (max.). Handle corian and micarta with stainless pins. Custom etching on blade.

Because a lot of my other attempts at making have too small of a riccaso...

over compensating?

I’ll get it figured out someday... maybe.

Small or no ricasso and micro-sharpening-choil produces maximum cutting edge. Like Ashwinearl's.
 
That's what I do, I try and get the edge as close to the indexfinger as possible(safely)

The first of a small batch of 4 close to identical small/utility kitchen knives I am working on.

15n20, black canvas micarta, and stainless pins. This is the first knife I etched my initials on to, too. It still needs an edge and I'm thinking of 15 degrees per side. I have thus far only gone more acute than that but perhaps my skill level is not there yet. You guys think that's a good edge angle for kitchen knives?

And I forgot how much of a bear canvas micarta can be - especially with getting an even color going. I'm going to try black paper micarta at some point and I'm going to order it thicker next time too. 3/16" on .065" steel doesn't leave alot of room for sculpting without getting too thin (at least how I look at it).
